Zucchini and Squash casserole with my home grown tomatoes!

Hello Friends,

I must say I am very proud of my tomato plant, it has really taken off this year. I am picking tomatoes every couple days, so my crop this week enabled me to make nice roasted tomatoes for a organic squash and mushroom casserole. It is low carb and delicious. Here are the steps I took to make this dish, if you make my dish let me know how it turned out. I have made this dish a variety of ways for friends and family, and it never disappoints! Try using ground turkey, bison or whatever ground beef you like. Have fun and enjoy!

2 pounds cherry tomatoes
4 basil leaves give a rough chop
package of hot Italian sausage with casings taken off. Cook as you would ground hamburger until no longer pink.
Jar of your favorite marinara. I like spicy.
package of crimini mushrooms cut into quarters
two large zucchini cut into bite size chunks
two large yellow summer squash cut into bite size chunks
2 cups of mozzarella cheese
1/2 cup parmasean cheese
pre heat oven 350 degrees…in a rectangular casserole dish put veggies drizzled with extra virgin olive oil, salt and pepper in oven for 20 minutes.
on a separate cookie sheet put tomatoes drizzled with extra virgin olive oil, salt and pepper in oven and cook for 20 minutes.
cook Italian sausage in a frying pan, when cooked through add the roasted tomatoes and the jar of sauce and basil. Let them marry for about 10 minutes.
When the roasted veggies are done top with the sauce mixture and cheese and put back in the oven for 30 minutes.
I like to jazz mine up with some fresh basil and freshly grated parm! Yummilicious!

Let it cool down before you eat it as the veggies and tomatoes retain a lot of heat! Beware…

Don’t Ever give up on your DREAMS!

I wanted to talk a little about dreams, achieving them versus letting them go. Reward or Regret?

As long as I can remember I have been a dreamer, I have had all sorts of dreams. My dreams mean happiness and fulfillment, and the satisfaction of not having any regrets. Some dreams come later in life, when the opportunities are aligned right with the stars. Execution and striving to never give up on the dream little or big is what its all about.

One of my life long dreams was to be a business owner! It took a lot of trials and tribulations, but I finally found my niche and passion. Miss Priss Cupcakes and Such has brought me so much fulfillment and happiness, a success I can pass on to my daughter! I jumped into the “trend” of cupcakes at the right time. Many ventures I tried were not meant to be or I lacked the determination at the time or it wasn’t a true passion. The point is I never gave up and I didn’t let outside voices sway what I thought was right. I truly am happy and blessed, the main thing I am happiest about is my daughter Madison’s verve for the business. She is talented and driven and carries the vision and passion as I do. The sky is the limit with us, we are positive believers and surround ourselves with people who love and believe in us.

Another one of my passions has always been writing. Writing down stories in my head onto paper, it is very therapeutic and helps me stay focused. It is an outlet so to speak, one that I relish. The world is a funny place, in my business I have had the opportunity to meet people from all walks of life, many interesting and kind people. I have been writing a screenplay, and one of my customers from the past seven years is a prominent executive producer who said he was looking forward to my final draft. I feel so lucky and that the stars are aligned for this other dream I have always held onto with both hands. Many times I thought to just let it go that it is too far fetched. The positive and driven person inside said, do not let your dreams go! Write it, present it, and see where the story takes you. If it doesn’t go anywhere, well at least I tried. No Regrets!

So no matter what your dreams are in life, if there is a will there is a way! Determination and drive to fulfill are what keep you going, I know that is true for me! No Dream is too Big, and you are never too old to go after them! Be kind, be honest, work hard and all will fall into place. Sometimes it works out, sometimes it doesn’t, the main thing is that you tried. Now, go get your DREAM! Here are a few quotes of inspiration! Hugs, Karie

What is your idea of an Extraordinary Life?

I have been soul-searching for some time now and my question is what constitutes an extraordinary life to you? I know there will be so many different answers as we are all so different with a wide variety of needs, emotional, material or otherwise. Some may say that an extraordinary life is an elegant life with the riches that go with it. I used to think that is what I wanted, but as I have gotten older I have come to realize that I don’t need much to make me happy. First of all it is important for me to be surrounded by people I trust! Second is to surround myself with people who genuinely care about my well-being and that I enjoy being with. Watching my daughter come into her own is magic before my eyes! I think the perfect life is where you have a job that is your passion, that affords you enough money to not worry about retirement. To make enough to take a summer vacation and a winter vacation. And once in a while play dress up and go somewhere fancy. That’s it in a nutshell. My most favorite thing in the world is to just hang out in my backyard with the people I love, have a few drinks, play games and LAUGH. Or a romantic dinner and slow dance with my boyfriend in our backyard. It’s a simple life…Its a good life!!

BFF trip to Temecula

My best friend Jenny and I decided to take a little trip to Temecula to just get away and recharge our batteries. We both work a lot and really haven’t taken any time out to enjoy life. Stopping to smell the roses once in a while is so necessary otherwise what’s the point! So for a few days we got to be wild and free like Thelma and Louise, except for the fact we didn’t kill anyone and we didn’t drive off a cliff.

We stayed at the South Coast Winery which is beautiful and amazing. We just did whatever our little hearts desired. Our first night we decided to try our luck at the local casino Pechenga. We played some machines for a while and had a couple cocktails. Lets just say we only left with dirty fingers, haha. After that we went and had a lovely meal and decided to return to our room and relax. We are kind of Yahtzee fanatics, we play all the time. So. have Yahtzee will travel! We turned on the quaint fireplace and poured a couple cocktails and started playing round after round of the game. We really don’t need much to amuse us, we laugh for hours at ourselves just being weird. I love to just let loose and act silly, like speaking in British while playing games. We rose early the next day, enjoyed some coffee on the patio then took a nice walk through the vineyard. The weather was beautiful the sky was blue with billowing white clouds, I couldn’t have asked for a more perfect day. After our delicious breakfast we headed over to the wonderful spa for massages. The spa at South Coast is just amazing and all the employees are so kind! We relaxed on the terrace in our cozy white robes and just chatted while we waited for our massages. Oh lord, my masseuse was amazing! I was a bit sore because I have been working out and she really worked out the kinks in my body, she then finished off with hot stones. Can I just say…Heaven! Nirvana with a hint of eucalyptus! After the massages we decided to take a swirl in the salt water spa, we were so relaxed, the stress that I was harboring just melted away. I am getting better at not allowing myself to stress so much because life is GOOD!

We went and got cleaned up and took a little trip to downtown Temecula to window shop. There weren’t many places still open, so we went back to what I call winery road and went from winery to winery and tried some different wines. There were some quaint mom and pop wineries which were my favorite, maybe because I have my own mom and pop style cupcake shop. I bought my daughter a bottle of sparkling wine, I knew she would like it because it was on the sweet side and she could add some fresh fruit to make sort of sangria like she enjoys.

We ate lunch at Ponte Winery, the meal was exquisite! They first brought out a loaf of pull apart bread that had sun-dried tomatoes in it. I normally don’t eat bread, but when in Rome…It came with a creamy dipping sauce made out of scallions with a hint of lemon. It was to die for! We split a kobe burger and harvest salad both were equally delicious! The ta da was the dessert! Yes we did! Again, when in Rome…It was a homemade apple tart with a scoop of homemade ice cream! Yummilicious, but we were good and didn’t finish and we shared.

We had a full fun day and had many laughs and absorbed the gorgeous scenery! That evening we put on our jammies and played some more rounds of Yahtzee and had a few cocktails, we also watched 50 Shades of disappointing! I can’t say I am looking forward to the release of the second film! I knew it would be terribly difficult to portray the book properly, so I suppose I shouldn’t have been shocked. Oh well, live an learn. We got to bed fairly early so we could take another morning walk in the vineyard and work off the desert! Lastly we were going horseback riding! We rented horses for 90 minutes and rode through rows and rows in the Wilson Vineyard, it was spectacular! I love horseback riding, and the horses were so sweet! They rescue horses and use them for the rentals. The horses are very well cared for you might even say spoiled! That is what I wanted to hear being the fanatical animal girl I am! I couldn’t have asked for a more fun day riding! The next day, oh boy, did my saddle hurt! It hurt for days, I had to go get another massage! haha. It was a restful, laughter filled time with my best friend and I am so glad I decided to throw caution to the wind and enjoy a little life! Thanks Jen for the great time as usual! Spontaneous trip to the mountains!

I made myself a promise nearly two and a half years ago when me and my daughter decided to go for happiness. I promised that I would live more, spend more time with people who matter the most to me. Make new and fun memories, be adventurous and spontaneous. That’s what life is all about, right! So I have been working a lot of hours and dealing with a lot of personal business, when I woke up one morning and said, we are going to play today. Well of course I have the best playmate ever, my boyfriend! He is adventurous and is always willing to go have a good time and he is the best person to just laugh with. We woke up early and headed up to the local mountains, it was a cool, crisp morning and the sun was shining bright, a perfect day to head to the mountains! We made it to Lake Arrowhead in about an hour and a half. We went and ate a delicious breakfast at an adorable Inn that had the best home-made breakfast and perfect coffee! After our relaxing breakfast we decided to go ride ATV’s for a couple hours. The weather was just perfect, 65 degrees! We rode through the trails with magnificent views of Lake Arrowhead, there were tranquil streams and waterfalls, I felt like I was in heaven. I needed this day in the middle of nature with my love. Even though we got mighty dusty on the trails, we didn’t care, we were in the midst of beauty with no agendas and the only thing we had to do was soak it all in. We got out of the vehicle and walked among the rocks near the crystal clear, cool water. I could live there! Someday, perhaps we should have a little place in the mountains! A girl can dream!

After our fun ride, we dusted off and headed to the other side of the mountain, Big Bear here we come! Like I said we had no agenda, just following our hearts desire. We ended up at Magic Mountain where we went on the bob sled slide, it was worth waiting in line. Of course I screamed all the way down because I was going so fast I was afraid I was going to fly off my sled! It was super fun! We had some time to spare before we headed home, so I looked up my Brother Jason. I had never met Jason before, I found out only a couple of years ago that I had a brother from another mother! He lives in Big Bear, so it was perfect, I tried to make dinner plans but he was working, so boyfriend and I went to visit my brother at his work. We knew each other right off as we have been chatting on Facebook for a while now. We have so much in common, we are a lot alike and it felt very natural. I was so happy to finally meet him! I know this will be the start to a wonderful sibling relationship! I’m so happy! I got a message from Jason when we left and he said he was so happy to finally meet me and that he couldn’t stop thinking about it! I felt the same way! Life is funny, it takes you on so many twists and turns, but we are the only ones who can determine our happy! I will never be robbed of my happy again! Happy…..Full steam ahead!

Before we headed down the mountain from our fun day, we stopped at a little Mexican Restaurant for a bite. It was okay, the company was better so it didn’t matter! When I got home I felt rejuvenated, happy and blessed. The only things that matter in this life is Love, family and friends. Love fiercely, play hard, live loyal. Courtney Sixx ladies luncheon to benefit Brightpink.org

sixx2sixx3sixx5sixx6sixx7sixx8sixx9sixx1I admit I am a little behind on my blogging :/.   I woke up this morning with one of those feelings inside….like a renewed feeling?  You know that feeling I am talking about?  I feel inspired and free like all the negative vibes from yester years have magically dissipated.  Peaceful… a simple happy defines it best I believe.

I wanted to share a lovely afternoon I enjoyed a while back.  Courtney Sixx invited me to a ladies luncheon at her home that was benefiting Brightpink.org.  Bright Pink is on a mission…”Be Brilliant, Be Bold, Be Bright Pink!  Bright Pink is the only national non-profit organization that focuses on the prevention and early detection of breast and ovarian cancer in young women, while providing support for high-risk individuals.”

Courtney was at an intermix event in Brentwood and heard about Bright Pink and decided to find out more about the organization and become involved.  Courtney is no stranger to Cancer.  Her mother is a ovarian cancer survivor and her grandmother had breast cancer.  I had an opportunity to meet Courtney’s mother and have a lovely chat, she is a very sweet woman!  If those aren’t reasons enough to become involved with cancer prevention I don’t know what is.

I pulled through the beautiful gates in Westlake Village, and made my way to the Sixx Residence, Nikki and Courtney recently purchased the magnificent home.  I was greeted by Courtney who was doing some last-minute touches.  She had French music flowing through the speakers in the gorgeous backyard.  The table settings were impeccable and boasted of excellent taste.

Courtney throws a fabulous luncheon, h’ourderves were made by the renowned caterer AC Events.  They are the same caterers that were responsible for Prince William and Kate Middleton’s Wedding spread.  Strawberry Mojitos were Courtney’s signature cocktail for the day, or champagne and other cocktails were available.

I met some amazing people on this beautiful day.  Some very amazing women who are smart, talented and inspiring.  I met the beautiful Susan Holmes McKagen, wife of Duff McKagen.  Susan is an international model who turned swimsuit designer mogul.  She is a lovely woman who makes me want to keep going after my dreams.  I also met Gretchen Rossi, she too is a super nice and beautiful woman.  She has the Gretchen Christine line, which includes, make up, clothing, handbags etc.  Talk about a go getter.  I was impressed by how down to earth everyone was and how friendly.

Now for Miss entrepreneur herself,  Courtney is the How2girl.  Check out Courtney’ s web site, www.how2girl.com.  This is a DIY guide to everything fabulous.  Courtney also has a radio show on iHeart.  She is a very busy girl, and a newlywed to Nikki Sixx of Motley Crue.  What an amazing couple they make, you can see the happiness in Courtney’s eyes.

Courtney asked her guests to bring gently used clothing, handbags, jewelry, etc. that she can auction off to benefit Be Bright Pink.  Her friends did not let down, the items that were donated were gorgeous designer pieces that any sane woman would kill to have.  Haha, but this is for such a great cause!  Through Courtney’s efforts and her friends donations she raised $12,500.  Just from a nice afternoon of fun!

I made cupcakes for the guests that were simply adorable if I don’t say so myself.  Miss Priss Cupcakes and Such is always happy to lend a hand to help out charities.  (Especially one that is Pink).

Thank you Courtney for inviting me to your lovely home, it was an honor.  I had a wonderful time seeing you again and meeting your friends!  Xo

Madison Ivy

In November we celebrated my daughter’s 21st birthday. I cannot believe my baby girl is a grown woman! Madison has been the light of my life even before she was born. Giving birth to Madison was literally a miracle. If it weren’t for modern medical technology, she would not be here with me today. I relished watching this little angel grow up before my eyes, she was a smart and funny little toddler. She was downloading games on the computer at 2. Her favorite things growing up were books, she never went anywhere without them. She quickly learned to read, and asked endless questions. Madison excelled in school and was tested to be a gate child. This is when the child is above average in the grade, and schools group these children in classes where they are at the same level and can be taught at the pace which will keep them interested and learning. Madison excelled all throughout school and graduated with many honors. She then got accepted into Loyola Marymount University, we loved the campus and the professors were all exceptional. She did very well her freshman and sophomore years. When it came time for her Junior year, we could no longer afford this prestigious university nor were we approved for more student loans. She was devastated! She worked her whole life to experience the university life. She has no regrets, she is happy! She is finishing her College years at Cal State Long Beach. What can I say? I’m a proud mom, and I know I gush over Madison, I can’t help it! I would never sacrifice a moment in Madison’s life. You can’t put a dollar amount on that! Fact! Love you forever Wubbie! Next? Many adventures together, love, laughter and peace of mind!

I have finished my vision board for 2015. I am following simple daily steps to help accomplish my goals.

THIS IS AN EXAMPLE OF WHAT A DAILY LIST MIGHT LOOK LIKE….

1. Pray when I wake up and again before I go to sleep. I thank God for all I have, my health and my loving family and friends.
2. Exercise…might be a stead fast walk with hand weights or a bike ride. I feel I do better just moving outdoors than in a gym. Sometimes a gym is fun with different classes.
3. Healthy breakfast
4. Work…(bring healthy meals and snacks to stay on track)
5. Come home…
6. Make a healthy dinner
7. Walk Amy
8. Miscellaneous housework or laundry
9. Give myself a facial

You get the point. That is just my daily goals. For my year long goals I have a different list…

I list my professional goals for success, places and people I can network with to showcase our brand.

My personal wants, healthy lifestyle. Choose outdoor activities rather than indoor ones. Hike more, bike more, walk more in different locations.

Love… spend more time with my loves which means all my favorite people in the world. Quality time, talking, laughing and planning adventures we can take together, in the desert or mountains, wherever. Just spending time with people, less texting! There is no better feeling than knowing you are loved and secure in your relationship! I love….Love!

Giving back, paying it forward. This is very important to me and always has. I want to do much more of this in 2015. I give back a lot, but there is always more that can be done. I will make time to help others more, perhaps help change some peoples lives. Be an angel to a stranger…You can too…

My vision board has little messages all over that envelop my yearly desires. Business opportunities I need to make, healthy options I need to take each and every day, goals of places we want to travel to. It should be a voice that yells at you when you look at it. YOU CAN DO THIS GIRL! YOU ARE FEARLESS! NOTHING OR NO ONE CAN STOP YOU! DO THE DREAM!

I do much better when I make the time to write my lists. If I just go by what is in my head I will talk myself out of it. I can do it tomorrow…No! If it is written down and I cross off the daily goal I feel accomplished. It works! Well that is me!

Happy New Year!

Happy 2015 Friends! I don’t know about you, but I have a strong and good feeling about the opportunities that are available to me this year if I just MAKE myself available to JUST DO IT. We sometimes hold ourselves back due to fear of failing, and of succeeding. It sounds a bit silly but its true. I know many people who hold themselves back, and once they let go and go for it, they always want to kick themselves because time, and sometimes years were wasted contemplating the notion of taking action. I know I for sure am guilty of this. Execution is my motto this year, taking action without regret. I really haven’t made any resolutions in particular, but I have made myself a promise that I intend to keep and that is to maintain the new-found happiness and peace I have in my life. I will never let someone dictate how my life will be lived or what the terms of my happiness will be. When you completely let go, the feeling of being free from purgatory is serendipitous! My daughter was just mentioning the same thing to me when we sat down for a New Years Day breakfast. She has never felt more secure and eager to build her future. She is so excited about finishing college and taking the next steps with her goals in life. We have had obstacles, but we just dealt with them with dignity and knowledge that one day the past will be just that. No mother could ever be more proud of the strong, beautiful and independent daughter I have had the privilege of watching grow and turn into an amazing woman. We can learn a lot from our children! They give a fresh perspective to problem solving and sometimes teach us what is really important in life.

I am curious, what do you do to execute your goals? What are your goals for this year? I use the word goal rather than resolution. Resolutions are typically broken. Do you want to lose weight, quit bad habits, be a nicer person, get a better job? How will you go about making the goal a reality….or should I say…A SUCCESS!
